These cookies are Barbie inspired but if you just want to make regular shortbread cookies, you can follow the recipe without the food coloring! 

Ingredients:

  • 1 cup butter, softened, 1 cup butter = 2 sticks
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour

(Optional) 

  • Pink food coloring
  • White icing

Step 1: Preheat oven to 350 degrees fahrenheit. Prepare your baking sheets with parchment paper. 

Step 2: In a large bowl, mix the butter and sugar. You can add your food coloring here. (I added mine after the dough formed, but both ways work.) Add your flour slowly and continue to mix until it forms a soft dough. It will be crumbly but keep kneading.

Step 3: Form the dough into a cohesive ball with your hands. Roll the dough 1/4-inch thick on a surface dusted with flour or powdered sugar. 

Step 4: Cut into rounds, or cut using a cookie cutter, and place on prepared baking sheets. 

Step 5: Bake for 16-18 minutes, or until cookies are ready. Let cool. 

Optional: I decorated with white icing. I added the Barbie “B” to add to the theme.
